Chocolate Chip Almond Flour Protein Cookies

I have been testing out many different recipes in order to find the best protein cookies and I think I finally perfected it! These cookies are not only delicious but they are great snack any time of the day. Filled with lots of good protein, they are great for a quick breakfast on the go, a good post workout treat, or just a delicious snack. They are gluten free, quick and easy to make and can be adapted to your favorite flavors.

Ingredients:

  • 1 cup almond flour

  • 1/3 cup vanilla protein powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/4 cup peanut butter

  • 1/4 cup melted coconut oil

  • 1 egg

  • 1/4 cup maple syrup

  • 1 tsp vanilla

  • chocolate chips (or any preferred mix-in of choice. Other options are nuts, peanut butter chips, M&Ms, dried fruit, etc)

Directions:

  • Preheat oven to 350 degrees

  • Line a baking sheet with parchment paper

  • In a medium bowl mix all the dry ingredients together

  • In a separate bowl mix all the wet ingredients until all incorporated

  • Add the wet ingredients Into the dry and mix well

  • Fold in chocolate chips (or other mix-ins)

  • Scoop dough onto cookie sheet about 1-2” apart (cookies wont spread much so don’t need too much space)

  • Bake for 10-11 minutes (until golden brown)

  • Remove from oven (option to sprinkle with a little sea salt)

  • Let cool for 5-10 minutes and ENJOY!
