Chocolate PB Cake Balls (Made of Lentils!!)

Chocolate Peanut Butter cake balls... and you'll never guess what they are made of…. Lentils!! You really would have no idea, they taste just like a moist brownie (but have the added benefit of being full of nutrients)!

Lentils are an excellent source of B vitamins, iron, magnesium, potassium, and zinc. They’re also a great source of plant-based protein and fiber. 

These cake balls were actually a happy accident. They weren't my intended recipe but after an initial brownie fail, these cake balls were born! I am very glad these didn't turn out well to begin with because I am LOVING these cake balls! What could be better than chocolate peanut butter combination and these are the perfect protein filled snack that you can feel good about feeding to your family. 

Additionally, cake balls are fun to make. A great activity to do with your kids. Let them get their hands dirty and roll the dough into balls, let them drizzle the peanut butter or sprinkle with any of your favorite toppings. This is a great way to expose your kids to a nutritious food they may have never had or been interested in trying. 

Ingredients:

  • 3 cups cooked lentils 

  • 2 cups chocolate chips 

  • 1/2 cup applesauce

  • 2 eggs

  • 2 tsp vanilla

  • 2 TBSP Brown sugar

  • 2 TBSP cocoa powder

  • 1/2 tsp salt 

  • 1 cup of creamy PB

  • additional chocolate for coating 

Directions: 

  • Pre-heat oven to 350 degrees

  • In a food processor, add lentils, chocolate chips, applesauce, eggs and vanilla and blend until smooth.

  • Add in sugar, cocoa powder and salt and blend until all combined 

  • Line a 8x8 baking dish with parchment paper 

  • Pour badder into baking dish and bake for 30 minutes

  • Let the brownies cool completely 

  • Dump the brownies into a bowl and crush up with your hands

  • Add in 1 cup of creamy peanut butter and mix well 

  • Form dough into balls and place on a lined baking sheet

  • Place in the freezer for at least 20 minutes to harden

  • Melt chocolate 

  • Remove balls from freezer, dunk in chocolate and place back on baking sheet

  • Drizzle with peanut butter and optional sprinkle of sea salt

  • Let harden and ENJOY!
