Chocolate peppermint Brownie Cookies

Looking for something fun and festive to make with your kids this holiday season? Try these chocolate peppermint brownie cookies. These are easy to make and a delicious treat for your family and friends. The best part is, if you don’t like mint, no worries! You can use vanilla extract instead of the peppermint extract and skip the candy cane topping. You can also top them with white chocolate, caramel, peanut butter or leave them plain. No matter how you make them, you won’t regret it! Although these are festive for the holiday season, they are delicious anytime of year!

Ingredients:

  • 1 cup whole wheat flour

  • ½ cup cocoa powder

  • ½ cup brown sugar (or coconut sugar)

  • ¾ tsp baking soda

  • 4 tbsp applesauce

  • 3 tbsp milk

  • 2 tbsp coconut oil

  • 1 tsp peppermint extract

  • ¼ tsp salt

  • ¼ cup dark chocolate

  • 2 candy canes (peppermint sticks)

Directions

  • Preheat oven to 325

  • In a medium bowl mix all the dry ingredients, combine until there are no more clumps

  • Add in wet ingredients and mix until all incorporated

  • Form dough into balls and place 2 inches apart on a lined baking sheet

  • Bake in the oven for 9-11 minutes

  • Press down lightly once out of the oven

  • Melt chocolate in a microwave safe bowl

  • Drizzle chocolate on top of cookies and sprinkle with crumbled up candy canes

  • Set in fridge until chocolate has hardened and ENJOY!
