Almond Flour, Peanut Butter, Chocolate Chip Cookies!

Easy, healthy and delicious cookies! These cookies were originally created with passover in mind however they taste so good I think they are going to be a new staple in my house! 

On top of tasting delicious they are gluten free, full of protein and so easy to make! There are only a few ingredients and steps, all together they only take about 20 minutes to make. How easy is that! They also freeze well so you can have a healthy and delicious treat anytime you want!

Ingredients:

  • 1 cup almond flour

  • 1 cup peanut butter

  • ¼ cup maple syrup

  • 1 egg

  • 1.5 tsp vanilla

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1/2 cup chocolate chips

Directions:

  • Preheat oven to 350 degrees

  • In a medium bowl mix all ingredients except chocolate chops

  • Once everything is combined, fold in chocolate chips

  • Line a baking sheet with parchment paper

  • Using a spoon or ice cream scooper, scoop out batter evenly onto pan

  • Optional step: Sprinkle cookies with a little sea salt

  • Bake in the oven for 8-9 minutes (the cookies will look soft but they will firm up once cooled)

  • Let cool and ENJOY!
