Carrot, Date & Oat Breakfast Cookies

Breakfast Cookies!! Because who doesn’t like cookies for breakfast?!

These cookies are not only filled with hidden veggies but they are the perfect combination of complex carbs, protein and nutrients to kick start your day! They also make for a great afternoon snack or treat any time of day. You can get creative and add nuts, dried fruit or even chocolate chips! Very quick and easy to make and a treat your whole family will love and you will love feeding them!


Ingredients:

  • 1 cup carrots (chopped)

  • 5-6 pitted dates

  • 1 ripe banana

  • 1 cup oats

  • 1/4 cup nut butter

  • 1/4 cup honey

  • 1 tsp cinnamon

  • 1/2 tsp vanilla

  • 1/8 tsp salt

Directions:

  • Preheat oven to 375

  • In a food processor or blender, blend the carrots and dates until finely chopped

  • Add all remaining ingredients and blend until well incorporated (a dough ball will likely form)

  • Using a spoon or ice cream scoop, scoop out dough and roll into balls

  • Place dough onto lined baking sheet and flatten lightly with hands

  • Continue process until all dough is used

  • Place in oven for 25-30 minutes (depending on the thickness)

  • Let cool and enjoy!
