No Bake Chickpea Cookie Dough Bars

No bake Chickpea cookie dough bars. I don’t know if you can tell but I have a clear obsession with chickpea cookies. However, this time I decided to make them a little different and turn them into cookie dough bars. These bars are full of protein and healthy complex carbs, gluten free, vegan and super simple to make. I keep them stored in my freezer for a healthy treat any time of day! 


Ingredients:

  • 1 can of chickpeas

  • 1/2 cup peanut butter (or preferred nut butter)

  • 1 1/2 cups of oats

  • 1/3 cup brown sugar 

  • 1.5 tbsp coconut oil (+1 tbsp for chocolate)

  • 1.5 tbsp applesauce

  • 1 1/2 tsp vanilla

  • 1/4 tsp baking soda

  • 1/4 tsp salt 

  • 1 cup chocolate chips


Directions:

  • Add all ingredients (except chocolate) into a food processor or blender and blend until well incorporated (if batter is too dry add a little water).

  • Pour batter into a loaf pan and press down so its firm.

  • Store in freezer while making the chocolate.

  • Melt chocolate with additional 1 tbsp of coconut oil (I melted mine in the microwave but you can do a double boiler too).

  • Remove bars from freezer and pour chocolate over top, spreading it out to fully coat the whole bar.

  • Top with a little sea salt and place back in the freezer to harden (about 2-3 hours).

  • Cut up bars and ENJOY!
